RED CABBAGE & MIXED VEGETABLE SALAD INGREDIENTS (Serves 2) 75g red cabbage (chopped) 75g broccolli florets (chopped) 2 medium carrots (scrubbed & grated) 2 sticks celery, sliced 2 spring onions (chopped) 150g smoked or toasted tofu, Cubed OR chopped cooked chicken or Feta DRESSING 2 TBS cold-pressed mixed seed oil (or virgin olive oil) 1 TBS Lemon Juice or Cider Vinegar Freshly ground black pepper METHOD 1. Combine all the salad ingredients in a large bowl. 2. Mix the dressing ingredients together separately and then pour over the top. 3. Toss together and serve at once. |
