SWEET POTATO & LEEK SOUP Ingredients 4 Sweet Potatoes I onion 3 cloves Garlic 1 Large Leek or 2 small 2 carrots 1 tsp turmeric 1 tsp cumin black pepper 2 1/2 pts buillion stock Method 1. Chop all vegetables to small cubes 2. Saute off garlic & onions 3. Add the vegetables & stock and simmer for 15-20minutes until vegetables are tender 4. Allow to cool before blending 5. Add rice milk or soya cream for creamy taste and heat as needed. 6. Add cooked quinoa for extra protein and sustainance N.B. Do not boil
