Roasted Summer Vegetables & Feta Cheese

Serves 2

Ingredients 

2 Sweet Potatoes - Peeled and cut into large chunks

2 Red Onions - cut into 1/8ths

2 courgettes  - cut lengthways

3 large Tomatoes or 1 Beef tomato cut into 1/4's

1 pepper (any colour) cut lengthways

2 cloves garlic - keep skins on to stop burning

8-10 small mushrooms 

Olive Oil

Mixed dried herbs & fresh rosemary 

100g Feta Cheese or Goats Cheese

Method 

Pre-Heat Oven to 200C/400F/Gas mark 6

Place the sweet potatoes and onions in a roasting tin with the olive oil, and herbs

Make sure that the vegetables are coated with oil - Cook for 10-15 minutes

Add the other vegetables and toss around in the olive oil - Cook for a further 10 minutes

Check that sweet potatoes are cooked 

Split the vegetables onto 2 plates - remember to take the garlic out of its skin 

Crumble feta cheese over the top 

Sprinkle with Black pepper
