STEAMED BROCCOLI & SPICED TOFU (Serves 2) Ingredients 3/4lb Broccoli Florets 2 medium carrots sliced thinly lengthways 8oz Tofu cut into cubes 1 red onion thinly sliced 2 cloves garlic 3 Tbs lemon juice 3 Tbs Extra virgin Olive oil 1 Tbs Tamari soy sauce 2 Tbs Grated Ginger Red Pepper or Chilli Flakes to taste Method 1. Fill a large saucepan with 2 inches water, cover and boil to allow the ateam to build up 2. Cut the broccoli florets and chop garlic and onions and allow to sit to enhance their health properties 3. Add the tofu and sliced carrot to pan and steam for 2 minutes 4. Add the broccoli and onion and garlic and allow to steam for a further 5 minutes 5. Add the rest of the ingredients and toss over heat for a further minute 6. Serve immediately |
